Today I will share with you the last of my winter recipes from Extremadura. Ensalada de invierno is a tangy winter salad from Tornavacas, a little village in the Jerte valley, in northern Extremadura.

I tried this recipe for the first time just a few weeks ago and I found it unusual and tasty. It takes just 5 minutes to prepare and it makes a good side to grilled pork chops (pork and orange is a delicious combination).

 

Ingredients

3 big oranges

1 onion

A handful of pitted black olives

Olive oil

Vinegar (I used balsamic)

Salt

 

Preparation

1. Peal the oranges and cut them into slices. Put them in a big bowl.

2. Finely chop the onion. Add it to the bowl and mix so the onion becomes soft.

3. Slice the olives and add them to the bowl.

4. Season to taste with olive oil, salt and vinegar and mix well.

5. Serve.
